Emulsifier Trial Finds Microbiome Shifts but Limited Inflammation Change

What Was Tested

Sixty healthy volunteers first followed an emulsifier-free diet and then continued that diet while consuming brownies containing carboxymethyl cellulose, polysorbate-80, carrageenan, soy lecithin, native rice starch, or placebo.

Researchers tracked gut microbiota, permeability, inflammatory markers, cholesterol, and other metabolic readouts.

What the Trial Found

The abstract says microbial composition changed across treatment groups, and short-chain fatty acid concentrations were lower under emulsifier supplementation versus placebo.

At the same time, the study did not find clear differences at the end of the intervention for fecal calprotectin, C-reactive protein, or broader metabolic markers, though carrageenan increased transcellular permeability from baseline.

For lecithin and emulsifier suppliers, the main value of the paper is methodological: ingredient buyers are increasingly watching human tolerance and microbiome data, not only functionality.

It also shows why suppliers should avoid treating all emulsifier evidence as equivalent when one multi-arm study includes very different chemistries and outcomes.
